Happy Call Double Sided Pressure Pan - 韩国双面锅

Recently there is a Happy Call Pan(韩国双面锅) craze across most of the forum, facebook and recipes websites such as Munch Ministry where individual and members gets together to share their experience and recipes on using this "in-pan".

Basically Happy Call Pan works with a logic of a pressure cookers, patented silicon gasket and on-touch button magnetic locking systems which ensures cooking is hassle free, faster and healthier.  With the "Normal Pan(red )" having 3 layers and new "Ocher Deeper Pan(brown)" having 5 layers of ceramic durable non-stick coating, it actually speed up the cooking process and produce healthier dishes with enhanced flavour too.

The photo above shows the New Happy Call Ocher Deeper Pan (measured 27.5cm x 24.5cm x 7.5cm) and it is handy for cooking fish, chicken, meat, stew, soup and etc. Below are some basic functions of Happy Call pan's numbered above:-

1. SILICON GASKET
These red patented silicon gasket can effectively seals pan to prevent greasy liquid or smoke from escaping during cooking. And it also acts to prevent leakages during flipping of the pan while cooking.

Note: Over the time, this silicon gasket might expand a little so you can just trim it off the excess and push back firmly onto the groove, but ensure it does not black the "steam vent".

2. STEAM VENT
This allow excess steam to escape, maintain optimal pressure and cooking conditions inside the pan  and allow the meat to be evenly cooked.

3. OIL RECEIVER
It collects excess water or oil condensation which flow from "the upper pan" when the pan is opened.

4. GROOVED RIM
A grooved structure helps the pressure function of the pan by fitting the silicon gasket into the groove which seals and lock the pan.

5. STAINLESS STEEL HANDLE HOLDER
It connects the handles to the pan.

Each part of the handle comes with a magnetic button attached at the ends of the handle(refer to the photo above). With just "one-touch" the magnets it will lock both halves of the pan together tightly and sealed it before before any cooking or flipping.

To Lock - Push the two ends of the handles near and the magnetic buttons will snap closed with a distinct "click".

To Unlock - Simple insert you finger between the two ends of the handle and pry them apart and always open with both hands.

During cooking when the pan is sealed it cause the greasy oil and steam residues to collect on the inner part of the Upper Pan. So when the pan is opened all these residues will drip down onto the "tray" for easy and mess-free disposal.

Whereas the "steam vent" also acts as the drainage access for the oil and steam condensed and collected on the Upper Pan.

TO CLEAN AND MAINTENANCE
In order to maintain the pan in good conditions, once in a while, take out the silicon gasket and clean with a soft toothbrush in order to remove food residues. Or every 4 - 6 month, rub vinegar or lemon juice on the inner non-stick surface and warm it over low heat for a few minutes, rinse and wipe clean with a damp cloth. And remember NEVER use metal spatulas or cooking utensils that may damage the non-stick surface of the pan.


MY HAPPY CALL PAN RECIPES


Although there are quite a number of readers and friends asking me whether is it worth getting this Happy Call pan but for my view it always up to individual and their needs. Although this pan can do certain wonders but it also have negative area such as you won't be able to do stir-fry and get those "wok" smell like most of our wok do.

But in another way it does help to prepare some quick and easy healthy dishes such as pan-fry/grill fish and meat which reduce smokes and smells in the kitchen.

    ICook4Fun: There are basically 4 types of pan each different size and purpose. If get from online is cheaper ranging from 60+ - 70+. If you are interested you can take a look at the Gmarket link above :)

    But ladies, although this HCP can do quite a number of things but it does not do a great job for stir-frying dishes like :p

    1. Hi I have both the Basic(red colour) and Deep Ouch Pan(brown colour). If you are using it for multi-purpose cooking like steaming, stew, bake and etc. Advice you can get a Deep Ouch Pan which is the medium size type. :) HTH

  12. Hi Ellena, thanks for posting this, especially helpful for people that are interested! Btw, I was wondering do you actually need to flip the pan when you did all the above dishes? Heard it's quite heavy....is it very hard to flip especially when it's filled full with ingredients? Thanks!

    1. Hi Honey Bee Sweets, thanks for your kind words. It depend on the type of dish/bake u are doing. Not all need to flip the pan. For eg, you don't need to flip the pan while cooking hot plate tofu/claypot rice. But as for baking cake, you need to flip in order to even the cooking and colour. And when flipping you have to be fast and steady in order not to spilled or affect the texture of the cake :)

    3. Wow! You also place an order for HCP :) so which pan you get? Basic, Ouch or Jumbo? Oh... I seldom fried fish cos i hate the after smell which "perfumed" the kitchen and dinning area, so we always opt for steamed fish instead. HCP indeed is good for cooking fish and with the correct technique applied the fish is crispy on the skin, soft and juice inwards :)

      Any HCP can grill fish. May i know what fish you grilled? In order to have a crisp skin you have to pat dry the fish(best is in room temperature), lightly coated it with some corn flour but optional. You can add 1teaspoon of oil to the pan, put the fish. close the pan(don't lock). fry on medium low heat for 4 - 5 minutes before flipping the pan.

  14. Hi Ellena, after you recommended HCP on your blog, I am tempted to buy it too. I read that the Silicon gasket needs to be replaced over time. Is it true? How often should it be replaced? I'm not sure if I should get the regular pan or the Ocher deep pan. Would it be too heavy? Do u know how long it takes before the order arrives? Thanks. Michelle

    1. Hi Michelle, Yes indeed the silicon gasket need to be replaced every 6 mths of you can remove it and use a toothbrush to clean the it if you are heavy user. To replace just remove the old rubber and replace it with a new 1.

      If you have about 4 - 5 members at home and you wish to grilled chicken, make stewed and etc. Ocher is recommended. If order from MIKE it takes about 3 days to a week.

  15. Hi Ellena, can the Ouch Deeper Pan used to fry the fish and chicken like it was shown on tv? I don't feel like buying two pans if I can just use 1. Btw, the Happy Call Ceramic Pots looks good too. Have you tried it?

    1. Hi there, both the basic and ocher pan can use to grill fish and chicken. but if you want to cook for a family of 4 - 5 with whole chicken perhaps a ocher pan will be better.

      As for the Ceramic pot i have not order mine yet. Still thinking lolz.

  16. Hi Ellena,

    Can I just cook without the gasket and instead of closing and flipping the pan, I just leave it open and use it like any other pan and manually turn the food once a while? Cos abit troublesome to keep replacing the silicon gasket.

    Cos I was thinking of getting either a regular non stick pan plus a wok or just the deeper Ocher pan as my all in one cooking pan. I don't really deep fry food nor do I require "wok hei" for my stir fry.

    Also, is the HC pan good for shallow fry/ pan fry?

      If you removed the gasket the pan won't be tightly closed and the pressure is not there to cook the food too. And also the gasket would only need to be replaced every 6 mths or so. So no worries, you can get extra and keep.

      If you want all in 1 perhaps a ocher pan(brown) will be good enough for u to stir-fry, pan-fry, bake and stew. HTH :)

      I am not sure where you can get the extra gasket in Singapore. But usually when you purchase the pan online at Gmarket. You can op to buy extra gasket. So perhaps you can check the Gmarket seller on that :) HTH

      Yup there is no different b/w the red deeper pan and cher deeper pan. Both the same size only different in colour :) Oh the old version of hcp is 3 layers coating but the latest deeper and jumbo pan all 5 layers coating HTH :)

    I'm thinking of getting HCP also. Do your recipes use the orcher one (brown) or the basic one (red)? I plan to get only 1 and I wish to have one that can do most of the stuff. My family is a small family (2 adults and 1 kid, and 1 more baby coming along the way). If I get the orcher, can i still cook a small amount of dishes or it always has to be a big portion?

    Btw, I've been reading ur blogs often esp. to find recipes. Good blog and keep it up! :)

      Thanks for your kind words. Most of my recipes can be use in both pan whereas the ocher pan will have more rooms for the food to move around :p But then if you are using it for baking, you would have to x1.5 for the recipe or else the height of the cake will be slightly low.

      Yup, you can still work on small amt of recipe using the ocher pan.

      I just use a cooking chopstick(which i bought from daiso) for stir-fry/frying food. To scoop out the food or gravy i would like a spatula or wooden spoon. HTH

    1. Gosh! The Silicon Gasket melted? Emmm it might be due to high heat. Did you cook using high or low heat. For hcp you cannot use too high heat with big flame or else the gasket will melt.

    Just wondering if you know what's the best way to clean the HCP?
    My pan has lots of black grease stain on the outside of the pan. (I think it's cos my maid doesn't wash immediately after use, she cooks with it for lunch and dinner, wipes it with kitchen towel, then uses it to cook again thereafter. She only washes it a few hours after dinner cos instruction manual said Do Not Wash When Hot or the inner layer will deteriorate) we've tried Jif, dish washing detergent, the white "magic stain removal sponge etc but doesn't help...

      The wear and tear outside the pan is hard to remove if it is not done immediately or so. And it also depend on the heat and type of stove that you are using. I am not sure hw to remove the stain as well. But i just make sure i wash the pan within an hr after meal when it is cool off. Sometime i will clean inner pan with water plus lemon juice / vinegar simmering over low heat, cover and stand for a few mins b4 washing. HTH

    We are hoping to get one HCP for our parents, but not sure what is the difference between the 5cm and deeper 7.5cm variation?
    Understand that the deeper one could cook bigger items or portions, but if only need to cook small portions, does it still work perfectly well like the 5cm? I mean, will the food start swimming around during flipping and not get cooked well evenly if cooking smaller portions with a deep pan? Hope to hear your advice!

      Most of the readers or HCP users in Singapore bought the 7.5cm(deeper pan) which can cook for 4 - 5 pax depending on what is being cooked. But if what your parent intend to use if just for 2 - 3 pax then a normal (5cm) pan will do.

      Actually this pan works well for more or light portion in the pan so it doesn't matter :)

    i got an question that i used to do a lot of cooking for my family on pressure cookers, so is this product can do the same kind of cooking as an pressure cooker does like pressure cooking the food in few minutes
    Also, another question that as you have mentioned in a reply of yours on dated: 18/6/12 5:25 PM that the Silicon Gasket melted will melt on too high heat with big flame could be more precise about this try to explain it

      This HCP works similar to a pressure cookers, but it can also use to deep-fry, shallow fry, bake, grill and etc. So it is more useful than a pressure cooker if you know how to use it correctly.

      As for the silicon gasket surrounding the pan cover, i heard from other users that theirs tends to melt when they use it on high heat. As this pan don't required high heat to cook food, the most is low or medium low. HTH :)

  35. My HC pan has oil stains on the exterior. Can I use Magic Clean Kitchen Cleaner to remove the oil stain? Mama Lemon could not do the job.

      Errrr I am not quiet sure about using Magic Clean on HCP before but I know it is important that you clean it immediately after each cook to prevent the stains :)

    Can happycall pan be used on hotplate?

    I just bought the ocher pan and a hotplate in order to use it
    since i was using induction cooker.

    But i find the pan base (part in contact with the hotplate) a little sticky after cooking. Not sure if its safe to use.

    Do users of the happycall pan on gas stove have the same experience?

      Yes, HCP can be heated up on hotplate but i am not sure of the heat control as you can see the flame. As i am using gas stove, i did not see any sticky parts after using the pan.

      The different of Ocher Deeper and Jumbo is only on the size. Not much different, it all depend on what you are using it for. For a family of 4 - 5. I think Ocher Deeper is good enough :)

    I tried using the Happycall pan yesterday to cook salmon, to my surprise it is cooked within 5 mins! so impressive.. but i got one issue on e pan i wonder if you encounter too.

    i tried washing the pan few times but there's still a smell of the fish.. is there anyway i can get rid of the smell?

    am so going to try the recipes you posted.. :D

    1. Hi, to remove the "fishy" smell of the fish. You can simmer 1 cup of water plus 1 tablespoon of white vinegar or lemon juice in the HCP (Lock) for 3 mins. Off the heat and let steamed for another 5 mins or so, rinse and wipe dry :)

  43. I tried frying chicken (about 8) during Hari Raya recently. The oil spilled from the tray and dirtied my stove. I did not flip the pan but manually turn the chicken until crips. Is my technique right? I did tried frying 'ikan selar kuning' but when i flipped it, the fishes were all over the pan and i got to manually placed it nicely as it does not stick

    1. Hi Ruslina, perhaps you added too much oil in the pan? usually i don't recommend deep-fried or shallow-fried using hcp as the oil will spilled :(

      Yes, if there are empty spaces in the pan when you flipped it the fishes will go all over the pan become it won't stick it there.

    Is the bottom( reverse side) of your HCP darker than the top? My HCP is darker on the bottom not sure whether it is fake until I chanced upon the online posts. My previous maid also seem to have damaged the inner coating, see black marks now n plenty of scratches. Do you think it is still safe for cooking?

    Just read ur blog on this happy call pan. I wonder how do diff it real & fake? There are so popular in market now & I read some review many of them bought from groupon coz of the cheaper price & promotion. But end up they say is fake try to claim it fr groupon but fail as reply need feedback fr dealer. Can you please adv how do we diff it real & fake? I'm from Malaysia here. There are selling in jusco now too.

      Yes, you are right. There are a lot of HCP available in the market now. And it safer that you purchase from department stores or via online shop directly from Korea. Usually the original pan comes with the original packaging from Korea with menu book. The pan is slightly heavy with flat surface unless (jumbo pan). Or the best thing is take a look at those sold in department store (origin from Korea) and compare with those cheaper in price.

      Yes, you need to wash the pan with warm soppy water, rinse and clean dry. Coat a layer of oil on the upper and lower pan. then cook over lowest heat, 3 minutes on each side. HTH :)

    1. Hi SC, Emmm i am not quite sure about this. My mum who has a induction stove just bought a normal gas stove to use her HCP instead. But I did heard from the salesperson in the departmental store that you could actually add a metal placement or so on your induction stove to transfer the heat to the hcp, but i am not sure about it. Perhaps you could check with the HCP promoter instead.

    i have just bought the hCP but it smell like plastic when i cook my foods , and the rubber arround the pan (in red colour ) look cheap n i m not confident with this product !! any advice for me

      Did you washed and season your pan before using? The plastic smell might be due to the heat. HCP used medium to low heat instead.

    Now back in Singapore, I just bought three HCP Ocher Deep and Jumbo at a good price from a shop "Everything Korean at #02-03 International Plaza selling authentic koreans stuffs. The name speaks for itself. Maybe this info might be of some help.

    My happy call magnet suddenly came off and my maid accidentally put it back in other direction so instead of attracting each other now become refusing each other. Anyone know how to remove the magnet? I tried to heat the handle little bit and put other magnet but it's not strong enough to pull the wrong magnet out. How? Please help.....

  56. Is it safe to open the hpc while boiling or cooking? I believe its almost same as pressure cooker . It might cause accident f open while cooking. Thanks for answering questions as much as u can :)
